It’s Wednesday – and perhaps more importantly, it’s the Wednesday before my big summer conference next week. What does this mean?

1) I have a mountainous to-do list of details to finalize before next week in order to be ready for 150+ of my turkey people to descend upon a central Minnesota lake resort – ready to to network and learn and have some fun on the side.

2) I am making decisions left and right at work, which means my brain is tired by the time I get home. Tired, people.

3) Just because I have conference planning on the mind, doesn’t mean the rest of life slows down. Nope, it’s Vacation Bible School week for Joe … Father’s Day is coming up so there are gifts and cards to buy … plus I’ve got some other events coming up later this month and into July that require some attention to detail as well.

In other words, life goes on as usual.

I think I need a glass of wine. And an easy dinner that everyone in my family will like. Enter Gold’n Plump’s three varieties of frozen chicken patties. We have always enjoyed the original chicken patties, which can go straight from the freezer to the stovetop or grill and are ready in just minutes. Now, Gold’n Plump – a Minnesota company, thank you very much – has introduced two new yummy flavors – bacon and cheddar and mushroom and swiss.

I cooked up all three varieties on the stovetop for supper tonight for a taste test. (Yes, it’s still supper at my house – I’m a farm girl, after all, and on the farm, it’s supper.) I simply added just a little bit of olive oil to the bottom of a pan and followed the heating directions on the box. Easy peasy.

Verdict? Teacher Man and I were impressed with the new options. Our favorite was the bacon and cheddar, but only because we kind of have a thing for anything with bacon. The patties were juicy and flavorful and definitely an easy weeknight option, which I love. I know they would be amazing on the grill outside, as well – we just didn’t take the time to grill out tonight.

As for Joe … he ate both the original and bacon and cheddar varieties. His 10-year-old taste buds are – let’s be honest here – pretty dang boring. He did announce the bacon and cheddar patty “wasn’t too bad”, which I took to mean “thumbs up, Mom – please try these again.” He has always eaten the original variety, so I wasn’t too worried about that.

I will definitely be keeping these in stock in my freezer for quick weeknight meal options. The same can not be said for the quinoa side dish I tried with these chicken patties tonight. Um, blech. Not good. I’m not quite sure I’m ready to jump on the quinoa bandwagon yet, but perhaps I just need the right recipe.

  1. I need to try something like this. Honestly haven’t look for poultry in the freezer section lately. Thanks for the fyi!

    Quinoa in soup is an easy option for using it. Overall, I’m not a quinoa fan, except for breakfast. With honey, cinnamon, cream and a few chopped walnuts, it’s a “fancy oatmeal” I enjoy. I can make a batch in the rice cooker at the beginning of the week and scoop from it all week long. It’s a nice “breakfast for supper” side dish, too, instead of pancakes. Otherwise, I have yet to embrace quinoa. 🙂
