Tuesday isn’t over yet, folks, so there’s still time to sneak in a Turkey Tuesday recipe with Mexican Turkey Corn Chowder!

The calendar this time of year has a pretty typical effect on me – October gets closer and suddenly I crave soup, chili and comfort foods (all while I’m wearing boots and scarves instead of flip flops and sundresses).

That’s why tonight I couldn’t wait to get home and make Mexican Turkey Corn Chowder. My sister shared this recipe with me years and years ago and we both love it. It’s equally good with turkey (using oven-roasted turkey breast or turkey tenderloins) or chicken, although I’m always going to favor turkey of course. 😉 It’s not crazy spicy, even with the green chiles, but if you like more kick, you can increase the amount of hot sauce or throw in some red pepper flakes – totally your call.

I should mention, too, that Mexican Turkey Corn Chowder makes about four generous servings as is, and could be easily doubled for leftovers or if you’ve got more mouths to feed.

Mexican Turkey Corn Chowder

  • 3 tablespoons butter
  • 1.5 pounds turkey breast or turkey tenderloins, cooked and cubed
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 cups half-and-half
  • 2 cups (8 ounces) shredded Monterey Jack cheese
  • 2 cans (14.75 ounces) cans cream-style corn
  • 1 can (4.5 ounces) chopped green chiles, undrained
  • 1/2 teaspoon hot sauce
  • 1/4 teaspoon salt
  • 1/2 to 1 teaspoon ground cumin
  • 2 tablespoons chopped fresh cilantro + extra for garnish, if desired

Melt 3 tablespoons butter in a Dutch oven over medium-high heat. Add turkey, onion and garlic, and saute for 10 minutes. Stir in 2 cups half-and half and the next six ingredients. Cook over low heat, stirring often, for 15 minutes. Stir in 2 tablespoons cilantro. Ladle into bowls and garnish, if desired.

Confession: tonight when I made this, I totally spaced and only put one can of cream-style corn in the chowder and we didn’t notice anything different. 🙂
