It’s Monday and I have exactly five days of work before my holiday break commences. Too bad my mind is still on the weekend and all the fun that was had. 

Why can’t I just say home today, eat lefse, and watch Christmas movies?

First up in the “Dribs and Drabs” category … this Ah-Mazing Tator Tot Hotdish from Brenda at A Farmgirl’s Dabbles. I share her recipes a lot on Facebook and with good reason – they work and they’re super flavorful. Brenda has two versions of this recipe – one with homemade gravy and one using cream of mushroom canned soup. The latter is what I made on Friday night and we absolutely LOVED it. 

This sweet girl – my niece, Morgan, – turns 5 this week and we celebrated her birthday early this past weekend. She had a mermaid theme with lots of pink, purple, and turquoise!

Later Saturday evening, we enjoyed Colorado Bulldogs by the Christmas tree and introduced Joe to National Lampoon’s Christmas Vacation!

We also watched one of my favorite Christmas movies, The Holiday. Who else is with me on this? I just love this movie and all the characters! And maybe it’s my secret desire to have a cottage in England or Ireland where I can just hole up and write all day! 😉 

Aaaaah, lefse. Now the holidays are really here! I finally made my annual batch of lefse on Sunday morning, with Teacher Man’s help. I roll it out and he mans the lefse grill carefully. It’s all about teamwork! (You can find my family’s lefse recipe here!)

When we have lefse in the house, this can only mean one thing for supper: “lefse clings”. We fill the lefse with ground beef, boiled potatoes, peas, and plenty of butter … it’s a gorgeous Norwegian burrito that is both simple and amazingly delicious!

Perfection, I tell you! 🙂

Okay, enough daydreaming of lefse and back to work for me … wish me luck getting my to-do list complete (it feels a bit daunting right now!) and watch for a new Turkey Tuesday recipe tomorrow!
