Minestrone with Sweet Italian Turkey Sausage Links

cut into ½ chunks

tomato paste

chopped onion

sliced celery

garlic
minced

cups
sliced carrots

teaspoon
dried oregano

can
16 oz. diced tomatoes

chicken stock
1
can
15.5 oz. cannellini beans with liquid

can
16 oz. red kidney beans, drained
2
cups
baby spinach
1
cup
bowtie pasta
cooked
Pre-packaged pesto
optional
Freshly grated parmesan cheese
optional
Instructions
Heat olive oil over medium heat.
Add sausage and brown well. Remove from pan, cut into ½ “ chunks
Add tomato paste to pan, cook 5 minutes or until brown.
Add onions, celery, garlic, carrots and oregano. Cook until garlic is aromatic, approximately 5 minutes.
Add tomatoes and chicken stock.
Simmer 20 – 30 minutes over low heat until vegetables are tender.
Stir in beans and cut up sausage. Cook until beans are heated through.
A few minutes before serving add the cooked pasta and spinach and cook until spinach has wilted.
Serve in soup bowls, garnished with a dollop of pesto (opt) and grated parmesan cheese.
Notes
Be sure to use a generous cup of pasta.
