Chocolate Chip Chai Banana Muffins

  • 3-4 Overly ripe bananas, mashed  (about 1 1/4 cup mashed)
  • 1/4 cup coconut oil melted
  • 1/4 cup honey
  • 2 extra large eggs (large eggs will also work here)
  • 2 teaspoons vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground all-spice
  • 1/2 teaspoon kosher salt
  • 1-1/4 cup semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Line 12 muffin tins with paper liners or spray the tin with cooking spray
  • In a large mixing bowl, stir together the mashed bananas, coconut oil, honey, eggs, and vanilla until combined.
  • Add the flour, baking soda, cinnamon, ginger, cardamom, all-spice, and salt; mix until just combined.
  • Fold in the chocolate chips
  • Divide the batter among the prepared 12 muffin cups.
  • Transfer to the oven and bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
  • Cool in the tin for about 5-10 minutes; then remove to a cooling rack.
  • Serve warm and enjoy!

Notes

You can sprinkle a few chocolate chips to the top of each muffin before baking if you really love chocolate, like we do!
