Easy Turkey Pot Pie

Ingredients
  

  • 1 10.75 ounce can cream of potato soup
  • 1/2 cup skim milk
  • 3 tablespoons mayonnaise
  • 2-1/2 cups cooked turkey diced
  • 1-1/2 cups frozen mixed vegetables
  • 1/2 cup onion finely chopped
  • Salt and pepper to taste
  • Herbs to taste optional
  • Pastry for a single crust pie
  • Melted butter

Method
 

  1. Preheat oven to 375 degrees.
  2. Stir soup, milk and mayonnaise together in a heavy saucepan over low heat until heated through.
  3. Add turkey, vegetables, onion, salt, pepper, and herbs (if using), and combine well, cooking another 1-2 minutes.
  4. Pour mixture into a greased 9-inch pie plate or rectangular pan of similar size.
  5. Top with pastry, crimping along the edges to seal.
  6. Cut slits to let steam escape.
  7. Brush with melted butter.
  8. Bake 20-30 minutes or until pastry is golden brown.
  9. Let stand 10 minutes before serving.

Notes

The original recipe calls for 2 percent milk, which you could certainly use. I typically only have skim milk in my house so that's what I substitute.
