Method
- Heat olive oil over medium heat.
- Add sausage and brown well. Remove from pan, cut into ½ “ chunks
- Add tomato paste to pan, cook 5 minutes or until brown.
- Add onions, celery, garlic, carrots and oregano. Cook until garlic is aromatic, approximately 5 minutes.
- Add tomatoes and chicken stock.
- Simmer 20 – 30 minutes over low heat until vegetables are tender.
- Stir in beans and cut up sausage. Cook until beans are heated through.
- A few minutes before serving add the cooked pasta and spinach and cook until spinach has wilted.
- Serve in soup bowls, garnished with a dollop of pesto (opt) and grated parmesan cheese.
Notes
Be sure to use a generous cup of pasta.
