Peanut Butter Oatmeal Chocolate Muffins

Ingredients
  

  • 3 ripe bananas I used 4 because they were smaller
  • 1 cup skim milk
  • ½ cup peanut butter I used Skippy Natural - creamy
  • ¼ cup pure maple syrup
  • 2 eggs
  • 3 cups old fashioned oats I used quick-cooking oats as that's all I had on hand
  • ¼ cup chocolate chips I used chocolate chunks and a few white chocolate chips, too
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla

Method
 

  1. Heat oven to 375 degrees.
  2. Mash bananas in mixing bowl
  3. Add rest of ingredients and stir well
  4. Line muffin pan with 12 paper/silicone liners
  5. Fill each one with batter (it will come to the top or even a bit heaping)
  6. Bake for 20-25 minutes or until tops become slightly browned
