I am officially obsessed with soup. Sometimes there is just nothing better than a flavorful bowl of hearty soup at the end of a chilly, winterish day. Am I right? Let me tell you, this Minestrone with Sweet Italian Turkey Sausage fits that bill perfectly.
Of course, with Thanksgiving just a couple of weeks away, you would think I’d offer up a soup that utilizes all those amazing turkey leftovers.
But no, you would be wrong. 😉
This week, I’m sharing a recipe my mom introduced to me that is full of chopped veggies, lovely red and white beans, delicious seasonings, and of course turkey – as in sweet Italian turkey sausage. It really makes a gorgeous looking soup that also happens to taste amazing.
Did I mention my mom is a fabulous cook? Which means, you will never go wrong by making Minestrone with Sweet Italian Turkey Sausage . Trust me on this.

Minestrone with Sweet Italian Turkey Sausage Links
Ingredients
- 1 Tablespoon olive oil
- 1 pound Jennie-O Italian Sweet Sausage Links cut into ½ chunks
- 3 Tablespoon tomato paste
- 1 cup chopped onion
- 1 cup sliced celery
- 2 cloves garlic minced
- 2 cups sliced carrots
- 1 teaspoon dried oregano
- 1 can 16 oz. diced tomatoes
- 5 cups chicken stock
- 1 can 15.5 oz. cannellini beans with liquid
- 1 can 16 oz. red kidney beans, drained
- 2 cups baby spinach
- 1 cup bowtie pasta cooked
- Pre-packaged pesto optional
- Freshly grated parmesan cheese optional
Instructions
- Heat olive oil over medium heat.
- Add sausage and brown well. Remove from pan, cut into ½ “ chunks
- Add tomato paste to pan, cook 5 minutes or until brown.
- Add onions, celery, garlic, carrots and oregano. Cook until garlic is aromatic, approximately 5 minutes.
- Add tomatoes and chicken stock.
- Simmer 20 – 30 minutes over low heat until vegetables are tender.
- Stir in beans and cut up sausage. Cook until beans are heated through.
- A few minutes before serving add the cooked pasta and spinach and cook until spinach has wilted.
- Serve in soup bowls, garnished with a dollop of pesto (opt) and grated parmesan cheese.
