I am sitting here writing this post on Sunday night and sipping a very refreshing glass of rose, very grateful for a three-day weekend that makes it seems like we’ve had two Saturdays in a row. (And certainly beyond grateful for the freedoms in the U.S. we have thanks to so many who gave their lives to fight for our freedoms.)
We’re pretty boring, as Memorial Day weekend planners go. We stayed at home. We didn’t necessarily have much of anything planned. But I can assure you we are loving every minute of it.
I will be the first to admit this doesn’t look anything like a summer meal. It was a little cool and rainy on Saturday so I made Creamed Corn Bread Pudding (beginnings of it shown in the photo – brioche bread cubes and celery and leeks cooking in butter) and Braised Short Ribs.
Nothing wrong with a fall-off-the-bone beef short ribs on a Saturday night!
Today, Teacher Man an I took Joe golfing. The weather was gorgeous and while our golf games were not always the prettiest, we all had enough good moments to keep us coming back. 😉
Later (ummm, after a nap), I did a little weeding in the vegetable gardens and also planted some zinnia seeds. My peonies are just starting to bloom! Here is the peony from my Great Grandpa Dave, who first planted this variety on the family farm.
My last two lilac bushes are in full bloom mode now and the backyard smells fantastic!
As for Memorial Day, two things are for certain: our favorite sriracha turkey burgers on the grill and Dairy Queen ice cream for dessert.
