  2. I love pasta.
  3. I love cheese.
  4. I love comfort food.

That’s it. That’s me in a nutshell, really.

Sure, I can get fancy in the kitchen. But when it comes right down to it, I will pick a creamy, cheesy pasta dish, preferably with turkey, any day of the week.

And I don’t like quinoa. Or kale.

If you are looking for those ingredients here, you are definitely in the wrong place.

Instead, allow me to introduce to you a very hearty, yummy, comfort dish – Creamy Cajun Turkey and Noodles.

This is Cajun turkey because I just cooked up the most UH-MAZING Cajun-style whole turkey over the weekend – a Jennie-O OVEN READY™ Cajun Style Whole Turkey that I truly believe is pretty much fool-proof. Here is what I did:

  1. I took the product out of the freezer.
  2. I took the turkey out of the outer bag but left the bird inside the oven-ready bag.
  3. I set the whole thing in a roasting pan and cut 6 slits in the top.
  4. I put the pan in a preheated oven set to 375 degrees and didn’t touch it for 3 hours and 45 minutes, after which time a pop-up timer indicated doneness, which I then verified with my own meat thermometer.

Voila! A juicy, perfectly cooked turkey with a fabulous Cajun kick to it – and plenty of leftovers for this pasta recipe.

If you don’t want Cajun turkey in this pasta recipe, then by all means substitute leftovers from a regular roasted turkey or turkey breast. But I’m telling you, if you can get your hands on a Cajun-style turkey, you should try it. And then let me know what you think. 

In the meantime, I’m going to dream about the fabulous leftovers I get to take to work tomorrow. 😉

Creamy Cajun Turkey & Noodles

Ingredients
  

  • 1 16 oz. package bowtie pasta, uncooked
  • 6 tablespoons butter
  • 1 12 oz. package frozen mixed veggies
  • 6 tablespoons flour
  • 2 cups whole milk
  • 3-4 cups cooked OVEN READY™ Cajun Style turkey breast cubed
  • 2 cans cream of chicken soup
  • 1 cup sour cream
  • 1 – 1 ½ cups Italian cheese
  • salt & pepper

Instructions
 

  • Preheat oven to 350 degrees F.
  • Cook pasta as directed on package.
  • While pasta is cooking, add butter to a large pot. Add frozen veggies and cook until thawed. Add flour and cook and stir for 1 – 2 minutes.
  • Stir in milk and bring to a boil. Cook until thickened and then add turkey, soup, sour cream, salt and pepper. Mix until well combined.
  • Drain pasta and add to sauce. Stir until well combined and then spoon into a greased 9x13 pan. Top with cheese, cover with aluminum foil, and cook for 25 – 30 minutes.
  • Cook uncovered for an additional 10 – 15 minutes.

Notes

You can also used regular leftover turkey breast or turkey tenderloins instead of the Cajun Style turkey breast.
