Well, friends … much of Minnesota got hit pretty hard by a blizzard and major winter storm this weekend.

Yep, in mid-April.

We had a least a foot of snow at my house as of this morning — and it continued to snow all day long. Seriously … All. Day. Long.

School is two hours late tomorrow and I’m pretty sure we’re all going to wake up Monday morning with a gigantic snow hangover. 

Sigh.

The thing about a blizzard in April, though, is that it definitely gives you an excuse not to do much of anything other than watch movies, read books, bake banana bread, and generally just be chill. That’s not all bad, really … if only it didn’t come with that much snow. 

To put it another way, I only saw Joe when he came downstairs today to eat at various times. Otherwise, he was a vampire up in his dark bedroom, playing computer games all day. 

Well, he did help Teacher Man snow blow the driveway, which was quite a big effort. 😉

And while we mostly eat turkey and chicken at our house, we’re not afraid it to mix it up with a mouth-watering ribeye or two once in a while!

Sunday morning was baking time for me! A little chocolate chip banana bread is always good for the soul. I’ve been hooked on this recipe from my friend Ali at Longbourn Farm — it’s a classic and it never fails!

Sunday night we tried a meal kit from Plated for the first time ever. (Perfect timing as the kit arrived Friday afternoon and I certainly couldn’t get out to do much grocery shopping this weekend!) The recipe was for salmon burgers with chive aioli and I have to say, it was delicious! The produce was fresh and the flavors were fantastic. It was kind of funny to work with individual portions of ingredients – but on the other hand, it allowed me to try flavors that I might not typically purchase, like capers. I’m not sure I’d do a meal kit often (on a weekly basis, for instance) but it was definitely fun to try!
