Let’s just get this out there right off the bat: I have been absolutely horrific at blogging this summer entire year. It’s true. I know it. You know it. We all know it.
Yet … it couldn’t be helped. And also … it will probably get worse before it gets better.
Sigh.
I really do have tremendously high hopes of doing several blog posts about our summer trip to France and Ireland. It will happen once I sift through about 2,846 photos (umm, give or take …) and figure out which ones I want to share the most. 😉 But it will happen!
In the meantime, I am pretty tickled with myself that I can even post a new Turkey Tuesday recipe for you at this point in my busy and harried life. Plus, bonus points that it’s 1) a great family-friend recipe; 3) it contains not one but two turkey products (#winning!); and 2) totally workable for weeknights/school nights. It is getting to be that time of year, after all.
Behold, I give you … Italian Grinder Sandwiches with turkey Italian sausage and ground turkey. If you love pizza flavors, you’ll love this sandwich! The recipe is adapted from a recipe I found through the Iowa Food and Family Project, which originally called for ground beef and pork sausage. I’m sure it’s tasty that way but there is absolutely no reason why turkey can’t and shouldn’t be swapped for both options!
These were a hit with my boys at home and I think you’ll love them too. Let me know what you think!
And I promise … I will be back soon with some vacation posts and my annual Minnesota State Fair trek with Joe, which happens to be coming up later this week. Can’t wait!
xoxo – Lara
