For real. It’s 39 degrees outside on May 19. Very funny, Mother Nature.

The winter-like weather didn’t stop this little iris from blooming, though, and that made me smile – while I was outside in my parka and stocking cap covering up my celery, broccoli and onions.

Good thing I haven’t planted anything else. I would run out of sheets to use to cover things.

But … it was a really nice, really low-key weekend, especially as I look ahead on the calendar and see three straight weekends of graduation parties, a wedding shower, and a piano recital. Welcome to the heart of May/June … it’s always a bit crazy!

We enjoyed family night at home on Saturday … including some hearty pasta carbonara with mushrooms and Italian sausage and crusty bread to go along with the vino. (And Saturday afternoon included a stop for a beer at our favorite local pub, Haye’s Public House, before we hit the grocery store.)

And what are these ^^^, you ask? Hello, turkey eggs – a special delivery from my friend and turkey farmer Erica! Believe it or not, I’ve NEVER tried a turkey egg, even though I’ve worked for turkey farmers for 23 years. Yep, I know. That’s crazy talk!

Turkey egg vs chicken egg!

We had fried turkey eggs on toast for lunch today. Each egg was a double-yolker and we were amazed at how big the eggs were! Super delicious, although from a flavor profile, we didn’t necessarily think they tasted different than chicken eggs. Just bigger and maybe a little richer – one egg (with two large yolks) was all we needed on one piece of toast. Talk about super protein!

Two turkey eggs = four yolks and a lot of egg whites!

I also made our favorite chocolate chip banana muffin recipe – so good! And true confession: I got mad at myself for overbaking them for a few minutes (mainly because I was doing five things all at once, of course) but in reality, Joe and I decided we liked them better that way. The muffins were more like mini banana breads with a slightly crunchy top and a moist center that wasn’t really compromised at all by slight over-baking. In fact, I would now highly recommend forgetting these in the oven for an extra few minutes! LOL

Coming up this week … a highly anticipated visit from my aunt and uncle who live in Arizona. We’re doing a bit of a progressive house tour for them … they are stopping in Buffalo Friday afternoon to see our house and enjoy some apps and wine. Then we’ll all head to my sister’s house for dinner. No doubt this will be fun! 🙂

Have a great start to your week, friends!

xoxo – Lara
